Monsoon Secret Coffee

This exceptional monsoon Malabar coffee is produced close to the southernmost point of India, north of the city of Cochin at an altitude of 900 to 1,500 metres. A special processing method is used to give this coffee its distinct character. First, dried and processed beans are peeled and packed in jute bags, the bags are then exposed to the monsoon and are repackaged every six to eight days in order to avoid mould. Finally, after eight to ten weeks, the beans are ready to be roasted. The resulting slightly swollen beans are endowed with very little acidity and as such more easily digestible. This harvest boasts a sweet aroma, a fruity, delicately herbal flavour and a full body.
