This exceptional monsoon Malabar coffee is produced close to the southern most point of India, north of the city of Cochin at an altitude of 900 to 1,500 metres. A special processing method is used to give this coffee its distinct character. First, dried and processed beans are peeled and packed in jute bags, the bags are then exposed to the monsoon and are repackaged every six to eight days in order to avoid mould. Finally, after eight to 10 weeks, the beans are ready to be roasted. The resulting slightly swollen beans are endowed with very little acidity and as such more easily digestible. This harvest boasts a sweet aroma, a fruity, delicately herbal flavour and a full body.

Preparation Method:
Step 1: Tear the foil over-wrap at the top right corner to remove the sachet.
Step 2: Gently open the sachet by tearing along the perforation, taking care not to spill the grounds.
Step 3: Hook the paper clasps securely over both sides of the rim of your cup.
Step 4: Slowly pour water heated to 95°C (203°F) over the coffee in a circular motion until the sachet is full.
Step 5: Pause and allow the water to fully pass through the grounds. Once drained, repeat 2-3 times. Remove the sachet and enjoy an exquisite cup of specialty coffee.
