Paraíso Gold Coffee

In the high Cerrado Mineiro region resides the third generation of the Andrade family who run one of the oldest coffee “fazendas” (plantations) in the region. Grown at an altitude of around 1,100 metres, the plants benefit from a good balance of rain and heat. The coffee cherries are picked at the perfect stage of maturation, then sorted through colour selection, after which the cherries pass through a sophisticated selector to create micro-lots. No water is used at any time, thereby increasing the quality of the beans by not wearing away the outer skin. This natural process also promotes more uniform drying by not mixing fruits at different stages of maturation. Fermented for 36 hours, the beans are then spread on beds in 30 centimetre layers for two days. The drying is slow, resulting in a higher-quality and more uniform coffee, with exotic notes of rose, wild berries, green apple, pineapple, passion fruit, banana, wine, nectarine, almond and chocolate and juicy, sweet acidity reminiscent of rhubarb, tart cherry and sugar candy. One of the most exceptional harvests in the world.
