What is specialty coffee?
Defined by the Specialty Coffee Association (SCA), specialty coffee represents the pinnacle of coffee quality— offering exceptional flavour, purity, and provenance.
To be officially classified as specialty coffee, beans must undergo a rigorous evaluation process conducted by certified graders. These professionals assess the coffee based on a detailed set of criteria, including:
- Aroma
- Flavour
- Acidity
- Body
- Uniformity
- Cleanliness
- Aftertaste
- Balance
- Sweetness
To qualify as specialty coffee, the beans must meet the following standards:
- No more than five full defects per 300g of green coffee
- Zero primary defects
- At least one distinctive attribute in flavour, body, aroma, or acidity
- No faults or taints
- No quakers (unripe or undeveloped beans)
- Moisture content between 9–13%

While premium coffee also offers a high standard of quality, it does not meet all the stringent requirements of specialty coffee. Premium coffee may still exhibit excellent flavour and character but is allowed a slightly higher level of imperfection.
Premium coffee typically includes:
- No more than eight full defects per 300g
- Primary defects are tolerated
- At least one distinctive attribute in flavour, body, aroma, or acidity
- No faults or taints
- No more than three quakers
- Moisture content between 9–13%
