The Akha hill tribe in northern Thailand cultivates this special coffee at altitudes of up to 1,500 metres in the shade of fruit and forest trees. The lush vegetation on the plantation prevents soil erosion and the consistent climatic conditions allow the yellow red Caturra and Catimor coffee cherries to ripen to perfection. Hand harvested from mid-November until mid-March, the cherries are washed in tiled basins and fermented for 36 hours before they are washed again with fresh water and dried in the sun on bamboo mats for 12 to 22 days. Enveloping your palate with a very mild aroma, this harvest offers notes of chocolate, nuts and citrus, and develops a lingering aftertaste of sweet caramel.
